This is a delicious, moreish Vin de Soif, albeit one with no lack of complexity and finesse. It’s blended from vines towards the bottom of Pélo’s sloped vineyards, where the soil is marginally deeper with extra clay. Raised in concrete to lock in its freshness and salinity, the ’21 is drinking brilliantly now, and is a predictably rewarding match for charcuterie and hard cheeses – the sort of fayre you’d associate with a harvest lunch.
