Moulin-à-Vent is one of the most prestigious crus of Beaujolais renowned for its longevity, and producer Edouard Parinet is a rising star of the area. His family bought the domaine over 10 years ago, and its members are now reaping the rewards of their investment and hard work. Of all their cuvées, Couvent des Thorins is the only wine which goes through Carbonic Maceration; the classic approach to Beaujolais provides an earthy bouquet and its dark fruits are ripe and pronounced.
