This perfumed, ethereal Pinot is a joy. The grapes are de-stemmed, and vinification takes place in tank (with 15-25 days’ maceration on the skins) prior to ageing in neutral oak. The slightly firm tannins contribute to a whole that’s sapid and deeply moreish.
