2016 Petite Arvine ‘Nuances’, Elio Ottin

An extraordinary white from the estate’s oldest parcel of Petite Arvine vines. A proportion of the grapes are botrytised, adding a mouth-filling lusciousness to the mix, although the wine is dry. It’s raised in a combination of foudre and barrique (about a quarter new) until just before harvest, then raised for another year in bottle prior to release. Multi-layered, tactile and aromatically complex, this is a dream for food-pairing: Elio recommends fondue or even truffles.
