NV Ruinart Rosé
Ruinart

Supposedly the first Champagne house to produce a rosé (uncovered in accounts documents from 1764), Ruinart today makes rosé blended from Chardonnay from Côte des Blancs and Montagne de Reims and Pinot Noir from Montagne de Reims and Vallée de la Marne. Lush tropical fruits and floral rose notes mingle with delicate raspberry on the nose, and bolstered by a bracing freshness and grapefruit on the finish.

NV Brut Intense
Champagne AR Lenoble

This is the Champagne to kick the night off with! Fresh pear and peach and light brioche are balanced with a lovely richness. Brut Intense is a blend of the three varietals of Champagne with the Chardonnay coming from the Grand Cru vineyards of Chouilly, the Pinot Noir from the 1er Cru vineyards of Bisseuil and the Pinot Meunier from the two hectares A.R. Lenoble owns in Damery. Thanks to the large proportion of reserve wines and long cellar ageing the dosage is kept to the minimum.

A lovely salmon pink, this rosé Champagne is just 10% of the rich, lush Pinot Noir from Bisseuil, blended with the fresh driven Chardonnay from Chouilly. Wild strawberry and red cherry flavours throughout the palate, finishing with an uplifting minerality. The rich fruit is balanced with a low dosage for a beautifully balanced rosé for spring.

2016 Stolpman Trousseau Pet'Nat
Stolpman Vineyards

A collaboration between Stolpman Vineyards' Peter Stolpman and ex-sommelier-turned-winemaker Rajat Parr, the Combe label is a collection of esoteric grapes- and Trousseau is certainly esoteric! Made as a beautifully delicate sparkling wine, this Trousseau is made in the pétillant naturel style, which is to say that it is bottled before fermentation is complete. The wine is left to go through a secondary fermentation in the bottle using the remainder of the natural yeast and sugar, no liqueur de tirage added as in the making of Champagne. Crisp and bright, subtle apple, pear, and cherry fruit slowly emerge in the mouth. An inviting, delicious celebration wine.

2014 Brut Contadino Spumante
Ciro Picariello

Avellino is located in the southern third of Italy, with Naples as the closest widely-known city, and not too far from Vesuvius and Pompeii. The high winds of summer and the cool nights mean that maturation arrives gently, increasing complexity and maintaining freshness, even in the warm climate of southern Italy. Ciro Picariello and his wife, Rita focus on the local Fiano grape. This Fiano is a beautiful sparkling wine, made in the méthode champenoise, which is only one of the reasons that set it apart from the ubiquitous prosecco. The nose is floral and lightly yeasty, and mineral on the palate: perfect for a bright aperitif.
